Roasted Vegetable Salad with Balsamic Glaze
Ingredients:
- Seasonal vegetables (bell peppers, zucchini, eggplant, cherry tomatoes)
- Olive oil
- Salt and pepper
- Balsamic glaze
Instructions:
- Preheat the oven to 425°F (220°C).
- Chop the vegetables into bite-sized pieces using the Cuisipro Handheld Mandoline
- Toss the vegetables with olive oil, salt, and pepper. Spread them out on a baking sheet.
- Roast in the oven for 20-25 minutes, or until they are tender and slightly caramelized.
- Drizzle with balsamic glaze and serve warm or at room temperature
Apple Cinnamon Oatmeal Cupcakes
Ingredients:
- 1 1/2 cups rolled oats
- 1/2 cup whole wheat flour
- 1/2 cup applesauce
- 1/4 cup honey
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 apple, finely chopped
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a bowl, mix oats, flour, cinnamon, and nutmeg.
- Add applesauce and honey to the dry ingredients and mix well.

Maple Dijon Chicken Skewers
Ingredients:
- 1 lb chicken breast, cut into cubes
- 1/4 cup maple syrup
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- Salt and pepper
Instructions:
- In a bowl, mix maple syrup, Dijon mustard, olive oil, salt, and pepper to create a marinade.
- Add chicken cubes and marinate for at least 30 minutes.
- Thread the chicken onto skewers.
- Grill over medium heat for 10-12 minutes, turning occasionally until the chicken is cooked through.

Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Instructions:
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix flour, sugar, baking soda, cinnamon, and nutmeg.
- In another bowl, whisk pumpkin puree and oil. Add to the dry ingredients and stir until combined.

Harvest Quinoa Salad
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper
Instructions:
- Cook quinoa in water according to package instructions. Let cool.
- In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, red onion, and feta cheese.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
