Roasted Vegetable Salad with Balsamic Glaze
Ingredients:
  • Seasonal vegetables (bell peppers, zucchini, eggplant, cherry tomatoes)
  • Olive oil
  • Salt and pepper
  • Balsamic glaze

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Chop the vegetables into bite-sized pieces using the Cuisipro Handheld Mandoline
  3. Toss the vegetables with olive oil, salt, and pepper. Spread them out on a baking sheet.
  4. Roast in the oven for 20-25 minutes, or until they are tender and slightly caramelized.
  5. Drizzle with balsamic glaze and serve warm or at room temperature

 


Apple Cinnamon Oatmeal Cupcakes

Ingredients:

  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup applesauce
  • 1/4 cup honey
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 apple, finely chopped

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a bowl, mix oats, flour, cinnamon, and nutmeg.
  3. Add applesauce and honey to the dry ingredients and mix well.
  4. Fold in the chopped apple using the Cuisipro Deluxe Pastry Blender
  5. Spread the mixture evenly in the baking dish and bake for 25-30 minutes or until golden brown.
  6. Let cool, then serve.

 

Maple Dijon Chicken Skewers

Ingredients:

  • 1 lb chicken breast, cut into cubes
  • 1/4 cup maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • Salt and pepper

Instructions:

  1. In a bowl, mix maple syrup, Dijon mustard, olive oil, salt, and pepper to create a marinade.
  2. Add chicken cubes and marinate for at least 30 minutes.
  3. Thread the chicken onto skewers.
  4. Grill over medium heat for 10-12 minutes, turning occasionally until the chicken is cooked through.

Pumpkin Spice Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix flour, sugar, baking soda, cinnamon, and nutmeg.
  3. In another bowl, whisk pumpkin puree and oil. Add to the dry ingredients and stir until combined.
  4. Spoon the batter into the Cuisipro Muffin Tin for even portions.
  5. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

 

Harvest Quinoa Salad

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper

Instructions:

  1. Cook quinoa in water according to package instructions. Let cool.
  2. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
